Asiatic varieties are characterized by their distinctive umbel. When mature the umbel has an exceptionally long beak that is hollow for much of its length. The bulbils range from large to huge and in some varieties there may only be a few bulbils in a capsule. Asiatics do not require scape removal to produce large bulbs, although it may help to increase size slightly. Flavours range from mild to hot and spicy. Asiatics are usually among the first varieties to be harvested.
